With the weather starting to get a bit warmer, pesto is a great summer sauce to pair with pasta or even put on pizza! Super simple, super quick, super delicious!
Ingredients:
2 cups firmly packed basil leaves, washed and trimmed to remove stems
5 medium garlic cloves, peeled and halved
1/4 cup olive oil
2 tablespoons pine nuts or walnuts
Salt and pepper
Grated Parmigiano cheese
Instructions:
Wash and dry the basil leaves.
In a blender or food processor, pulse the leaves until they are coarsely chopped.
Add half of the oil and all the garlic cloves.
Continue pulsing the basil mixture to create a pastelike consistency.
Add the pine nuts and the remaining oil and blend until smooth.
When storing the pesto in a container, be sure to cover the top with a thin layer of oil to maintain the vibrant green color.
Top with grated Parmigiano cheese before serving.
