Is breakfast really the most important meal of the day? While countless studies have shown a positive correlation between eating breakfast and higher test performance, there are still many students who choose to skip it.
The most common complaints that I’ve heard from the anti-breakfast side are that these students don’t have any time in the mornings or they want to save money. So I’ve included some simple recipe ideas that shouldn’t take longer than five to 10 minutes and only consist of a couple inexpensive ingredients. Even the busiest college student could manage these.
Here is a four-ingredient pancake recipe:
-1 large banana or 2 medium sized bananas
-2 eggs
-⅛ teaspoon of baking powder
-Preferred oil or butter
First, mash the banana in a bowl with a fork. Then add the two eggs and baking powder and mix all the ingredients together. Heat oil (or butter) in a frying pan and cook the batter until bubbles form on one side. Then flip it over to get a perfectly browned pancake. Finally, top it off with the classic jam or syrup combo. If you want a healthier option, serve it with a dusting of cinnamon and a handful of your favorite fruit.
For all you protein lovers, here is an egg-scellent idea to start off your day and help you hit the books and the gym:
-3 eggs
-Pinch or two of salt and pepper
-1/2 cup of meat of choice (bacon/sausage) or vegetarian substitute (broccoli)
-1 tablespoon of cheese of choice
-Preferred oil or butter
Start off by whisking the eggs in a bowl with the salt and pepper and then set it aside. N Next, warm up your meat of choice – I love to throw in turkey or any left overs from dinner – with your cheese in the frying pan for a minute. Then pour your egg mixture in the pan and let it cook for five to six minutes until the eggs set. Finally, remove it from the heat and let it cool on the pan for a couple minutes.
Cut up fresh frittata and serve it up to your friends. These are best eaten with veggies or avocado on the side. Leftovers will make for a perfect lunch or even dinner, so don’t be afraid to make more than one portion.
